Parmesan–Butternut Squash Gratin
prep time: 25 minutes start to finish: 1 hour 15 minutes
6 servings (1⁄2 cup each)
1 butternut squash (2 1⁄2 lb)
1⁄4 cup butter or margarine
2 large cloves garlic, finely chopped
1⁄4 cup unseasoned crispy bread crumbs
1⁄3 cup grated Parmesan cheese
1⁄4 teaspoon salt
1⁄8 teaspoon pepper
1⁄4 cup chopped fresh parsley
1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish
with cooking spray. Peel, halve lengthwise and seed squash; cut
into 1⁄2-inch-thick slices. Arrange with slices overlapping slightly in
bottom of baking dish.
2 In 2-quart saucepan, melt butter over medium heat. Reduce heat
to low. Add garlic; cook 2 to 3 minutes, stirring frequently, until
garlic is soft and butter is infused with garlic flavor. Do not let
butter brown.
3 In small bowl, mix bread crumbs, cheese and 1 tablespoon of the
butter-garlic mixture.
4 Brush squash slices with remaining butter-garlic mixture. Sprinkle
with salt, pepper and bread crumb mixture.
5 Bake 30 to 40 minutes or until squash is tender when pierced
with fork. Increase oven temperature to 425°F. Bake 5 to 10
minutes longer or until lightly browned. Before serving, sprinkle
parsley over top.

Lots of great ideas for recipes! I love it that it has the nutritional information on the recipe page since my husband and I are both dieting now. A lot of the recipes require only a few items that we have to go out and buy, which is nice too. Definitely worth the price!

Lots of Mexican and Asian recipes, not a lot of what I would consider everyday recipes, but does have a few. The pictures are great and plentiful.

I have always been a fair-to-good "throw-together" cook, but I've shied away from formal recipes because I don't have the patience for complicated directions.
Then I found this book. It's easy, the instructions are fairly clear, and the physical structure of the book itself is easy to handle. The Korean Barbecue Beef Stew and the Chicken Marbella are great starting points.
My only small nit: no room for step-by-step pictures in such a large book? They would have really helped.
Overall, if you want to start slow cooking, start here.

I just got this book a few days ago and I am EXTREMELY happy I bought it. I sat down with it last night to do some meal planning for the week with a handful of paper clips thinking I would mark the good recipes that I would probably make. Well I might as well marked every page. The book is full of great recipes. Easy ingredients that most people have on hand or can find readily. Clear instructions. Information on freezing if applicable. Nutritional information for every recipe. Nice since I count carbs and watch fat and salt intake. Comfort food that most will enjoy. One of the best cookbooks I have ever bought. Would recommend it to anyone who likes comfort food and home-style recipes. Every new cook should have this cookbook as well as season veterans.
